Hello,

When I convert my VLS TS to titre de sejour, does the allowed 90 days period for internships reset?

Can I sign two contracts with the company, one for 90 days pre conversion and another for the remaining duration after getting the titre de sejour?

The internship is in another EU country.

If the internship is another EU country then you need that country work permit. You cannot work with french student visa.
